That's what backup does, it will automagically bring up the dialer
when the primary interface goes down. You can use a
no keepalive on the ethernet and unplug to keep your route
in the table.

With eigrp I would do a dialer-list with deny eigrp, permit ip or
ipx whatever the case, just to keep eigrp from keeping the line up
forever.
