Hello Pierre,
what you need is not SRST ( the reason for this is that you can't setup
phones ) but the feature you are looking for is ITS within IOS, not very
commonly known.
ITS means IOS Telephony Service, formerly known as IP-KeySwitch.

What you need is a router with some space left in the flash and some work to
understand ITS, that's all.
If you only like to setup calls between IP-phones, there is no need for a
gateway.
