I will try some answers. Hope you get more feedback.

1- What happens when I put the command bandwidth percent, this percent is
based on the total bw 100% or only the 75% that reserve by default?

Depends of the IOS version. Take a Look at the command 'bandwidth' on 12.2T. It is related to the absolute value of the physical interface. 12.2T introduces 'bandwidth percent remain' which is relative, that is, subject to the available bandwidth

If it is a PVC, I found opposite statement from Cisco; one says that you can use maximum-bandw, while the other says it does not apply.

If it is Frame Relay DLCI, maximum-band does not apply. The bandwidth command will be related to the mincir. If you do not specify mincir, it will be cir/2

2- The default-class, works as any other class or it's takes the remaining 25%
of bw ?

You can specify each and use "bandwidth" command within this class, same as the other classess

3- If I do not configure the default-class, all packets that don't match any
criteria, are classified and switched in a best-effort way (WFQ) with the rest
of the bandwidth available (25%) ?

More or Less. If you do not specify anything, it will be best-effort (FIFO).
If you specify WFQ, precedence will be checked

4- When I put the command "bandwidth 32" in a class, I specified 32 Kbps. of
IP traffic or it's IP + L2 headers traffic ?

You should use a value that consider IP + L2
