You can use router on a stick to substitute for the L3 on the switch.  I
have one 3550 EMI and one 2912 XL.  In most labs you should have at least
one 3550/60 to get familar with the command structure and features (ext'd
vlans, pvlans, QoS, Multicast, etc).  In my lab I trunked the 2912XL to a
router for all the L3 switch configurations for my (SW2).
If you decide to purchase a switch(s) definately spend the extra money
for the 3560 in my opinion.  If you can pass the lab within the next 6
months you should be able to easily turn around and sell it to get back
most of the money invested.
