I  agree  with the second  part, however, if  given a choice  I  would
do server/client mode,  This way you only  have to create  your  VLANS
once  on the server,  they  should  then pass to the clients if your
trunks are ok

First things first, make sure you use vtp transparent mode unless
otherwise specified.
Server/client mode will just blast the same vlans to all the switches.
Secondly, draw out a layer 2 diagram noting which devices are in which
vlans and the switches they are connected to. Only configure the vlans
on the switches they connect to (and any transit switch as well).
