The most complete resource is "IPv6, Second Edition: Theory, Protocol, 
and Practice" by Pete Loshin, ISBN-10: 1558608109.  This talks about 
IPv6 from a vendor independent perspective, on how the protocol "should" 
be implemented, but not necessarily how it "is" implemented.  For 
implementation, e.g. IOS configs, the Cisco Press book or the IPv6 
configuration guides are good.
