I'd recommend looking at a stout Core i5, but preferably a core i7 quad core
processor. 8GB of 16GB of RAM, depending on budget. 8GB would suffice
without an issue, but if you plan on running VM's in parallel to your lab,
the extra RAM will help.

For HD, 500GB is more than sufficient, your primary concern there is speed
and reliability.

If you can find a stable, quality MB that supports the Core i7 2600k sandy
bridge CPU, I'd say that is your best bet for now. I'm not sure what is
coming out soon, but if you need something today, that is what I recommend.

Also, Ubuntu 11.04 is coming out in a few days - but the base desktop
environment is changing from Gnome to Unity, so if you prefer Gnome, keep
that in mind. I think Gnome is a secondary option under sessions when you
log in though, under "Ubuntu Classic".
